CHICKEN ENSENADA

Ok, who's been to RED ROBIN and had the Chicken Ensenada platter? It's good. Well, I was playing around and wala I think I found the recipe for the chicken. It's soooo good. It would be great on salad also.

3 chicken breasts-flattened
1/2 package of hidden valley ranch-fiesta style
1/2 cup of grated parm cheese(green can)

Mix the parm cheese and ranch packet together and put in a baggy. Add the chicken one at a time and then fry in a hot frying pan turning each piece of chicken once. It will take about 3 min per side. It's so easy, fast and yummy. ENJOY!

  2. Just a friendly comment. I tried your recipe and I liked it. While it tasted somewhat like the Red Robin Recipe it is not remotely the same. At least as the ones here in Kansas City. The Ensenada Chicken is not fried. As a matter of fact, if you can come up with the recipe for the lime dipping sauce, that is what they baste the chicken in when they grill it. One of the things I notice is that the coating kind of washes off a little when I squeeze the lime on it. I found out that they use the salsa ranch sauce as the grilling sauce by accident. I only use the salsa on the chicken so I asked them to hold the ranch sauce. Well, when the chicken came out it had no color to it at all and tasted plain. When I asked the waiter about it, he pointed out that I asked them to hold the ranch sauce. Of course, I only meant the dipping sauce so they redid it and brought me two of the poblano salsas which is what I wanted!! Maybe this helps. I enjoy cooking, but I am not good at mimmicking what I taste so maybe this will point you in the right direction. I'm working on it and have a great salsa recipe, which while different from theirs tastes awesome!! Like I said, I made your chicken recipe and it tasted great, by boys and wife liked it too, but I'm still on the quest for the perfect Red Robin Ensenada Chicken!!!
