PORK LOIN STUFFED WITH FETA AND SUNDRIED TOMATOES

Well, this was a nice Sunday afternoon dinner. It turned out great. This can easily be used with chicken breasts too. But the pork loins have been on sale so much that I'm stocked up. It was easy to assemble and looks beautiful when it's done.

1 pork loin filet (1 1/2 pounds)
3 sundried tomatoes from a jar(oil packed)
1/4 cup crumbled feta cheese
mrs dash seasoning salt

Set oven to 375. Cut pork lengthwise (butterfly it). Sprinkle cheese along one open side. Cut up the tomotoes and sprinkle on top of cheese. Close the loin and sprinkle seasoing salt over top-put a few toothpicks in to keep closed. Bake in oven for about 40 min or until slightly pink to no pink. What ever you prefer.

Enjoy!
