Well it's been a hectic few months and I think life is sort of getting back to "normal". I have been cooking a lot and working on my cookbook. Who knew making a cookbook would be this much work. I thought I would share this easy and tasty weeknight dish for all of you that have a crazy life like me.

4 boneless skinless chicken breast halves

2 tablespoons sugar free honey

2 tablespoons fresh lemon juice

1 tablespoon olive oil

1/2 teaspoon salt

Dash pepper

2 garlic cloves, minced

Place chicken in a greased 13-in. x 9-in. baking pan. In a small bowl, combine the remaining ingredients and pour over chicken.

Bake, uncovered, at 400° for 15 minutes. Broil 4 to 6 in. from the heat for 5-7 minutes or until juices run clear, basting occasionally with sauce. Yield: 4 servings
